Pork Menudo Ingredients


  • 1/2 kg pork liempo (bite sized cubes)
  • 1/4 kg pork liver (bite sized cubes)
  • 2 pcs medium sized potatoes (diced)
  • 1 pc medium carrots (diced)
  • 1 cup cubed red and green bell pepper
  • 6 cloves garlic (minced)
  • 1 pc medium onion (minced)
  • 1 (250g) pack tomato sauce
  • 1-2 cups water
  • 1 tsp sugar
  • ground black pepper to taste
  • 2 tbsp raisins (optional)
  • 1 cup Soy Sauce
  • Spring onions (optional)
  • Hotdogs (bit sized, diagonal)

Pork Menudo Procedure


  1. Marinate pork in soy sauce for 30 minutes to 1 hour
  2. Heat oil in a sauce pan
  3. Saute onion and garlic
  4. Add the pork and cook for 10 minutes
  5. Add tomato sauce and water and cook for 30 minutes
  6. Add liver and hotdogs and cook for another 10 minutes
  7. Add the vegetables - potatoes, carrots, raisins, red and green bell pepper. Cook for 10 minutes or until the potatoes and carrots are cooked/soft
  8. Add sugar, salt, and pepper as desired
  9. Serve hot with rice
  10. Enjoy!
