Sauted Mung Bean | Ginisang Munggo | Mung Bean Stew Ingredients
- 1 cup whole mung beans (Munggo) – Soak in water for 12 hours
- Water
- 4 cloves garlic (crushed/minced)
- 1 medium sized onion (chopped/diced)
- 3 pcs red tomatoes (quartered)
- ¼ kg pork liempo cut into tiny bits
- Malunggay Leaves
- 1tbsp Fish sauce
- Salt
- Fried dried fish, deboned (optional)
Sauted Mung Bean | Ginisang Munggo | Mung Bean Stew Procedure
- Saute onion, garlic, and tomatoes until brown/caramelized
- Add pork bits, add salt and fish sauce, and saute for 5 minutes
- Add water and add the mung beans, let it simmer until the mung beans are soft and easily mashed.
- Mash the mung beans as desired, for thicker soup
- Add malunggay leaves and turn of the heat
- You can mix in the dried fish in the mung bean or eat it as a side dish
- Serve with hot rice
