Sinigang in tamarind soup as what they call is a Filipino cuisine. Like its brother – Sinigang na Pork Liempo the Sinigang family is borrowed from other Asian countries.
My own sinigang na hipon recipe consists of radish (optional), kangkong (sinigang without a kangkong is a no no), green chilli (haba). I sometimes use natural ingredients in making my sinigang sour by using real tamarind fruit or lots of tomatoes.
Shrimp Sinigang | Sinigang na Hipon Ingredients
- 1kg medium or large shrimps
- 2 pieces Radishes or Labanos (optional)
- 1 bunch Water Spinach or Kangkong leaves
- Green Chilli/Pepper (haba)
- 1 pack Sinigang Mix (or you may use extracted tamarind juice)
- 3 pieces Tomatoes, quartered
- 1 medium Onions, quartered
- 1 tablespoon Fish Sauce(Patis)
- 5 pcs string beans
- salt
- Water
Shrimp Sinigang | Sinigang na Hipon Procedure
Procedure is similar with all other sinigang except that the shrimp is very easy to cook so don’t overcook them.
- Bring water to a boil
- Add the tomatoes, and onion and simmer for few minutes
- Add tamarind sinigang soup mix (or the tamarind extract/juice), salt and fish sauce to taste
- Add green chili peppers, radish, and string beans. Simmer for few minutes
- Add the shrimp and cook for 5 minutes
- Add the kangkong and turn off the heat. Let it rest for 5-10 minutes
- Serve with hot rice! Yummy!
